Ingredients

  • 2 medium zucchini (sliced into ¼ inch rounds)
  • 1 egg
  • ½ cup panko bread crumbs
  • ½ cup almond or other flour
  • ¼ cup Parmesan cheese
  • ½ teaspoon sea salt
  • Freshly ground black pepper
  • Extra-virgin olive oil
  • Dipping Sauce (e.g. Hogao, Shawarma White Sauce, Chipotle Garlic Mayonnaise a thick marinara, or any of these)

Steps

  1. Preheat the air fryer to 370°F.
  2. Pat dry the zucchini and reserve.
  3. Whisk the egg in a small bowl.
  4. Mix the panko, flour, Parmesan, salt, and pepper in a medium bowl.
  5. Dip the zucchini slices into the egg and then dredge in the panko mixture, transferring to a plate as you work.
  6. Spritz the tops with olive oil, transfer them to an air-fryer basket (spritzed side down), spritz again, and cook until the tops are golden brown (~6-8mins).
  7. Flip with tongs and cook for another 6-8 minutes or until golden brown.
  8. Serve immediately (before they get soggy) with sauce for dipping, if desired.
